Five A Day Salad

4 cups fresh spinach
4 cups Romaine lettuce
2 cups chopped green pepper (or use red, yellow, or orange)
2 cups cherry tomatoes
1 cup chopped broccoli
1 cup chopped cauliflower
1 cup sliced yellow squash
2 cups sliced cucumber
2 cups chopped carrots
1 cup sliced zucchini


Wash all of the vegetables.

Mix together all  washed vegetables to a salad bowl.

Serve low-fat salad dressing, if you want.

Spinach is very rich in Vitamin A.It also has a good amount of Vitamin K
Romaine lettuce contains protein,Vitamin C,A,K and Folate,also Calcium,Magnesium,Phosphorous and Iron.
Peppers are good source of Vitamin C,thiamine,Vitamin B6,beta carotene and folic acid
Tomatoes have Vitamin E,thiamin,niacin,Vitamin B6,Folate,Magnesium,phosphorus and copper.
Broccoli are source of dietary fiber,Vitamin A,Vitamin C,Vitamin K,potassium and manganese.
It is a very good source of dietary fiber, pantothenic acid, vitamin B6, vitamin E, manganese, phosphorus, choline, vitamin B1, vitamin A (in the form of carotenoids), potassium and copper. Broccoli is also a good source of vitamin B1, magnesium, omega-3 fatty acids, protein, zinc, Cauliflower:calcium, iron, niacin and selenium.
